Hummus Smeared Faux-Dillas (aka Quesadillas)


These faux-dillas will really get your motor running. They're perfect for a quick, healthy lunch, and are ideal for using up random bits of goodness from your fridge.

They're totally carnivore-friendly, too. In other words, you won't hear any of that "Where's the cheese?" nonsense if you serve them up for a half-time snack during the NBA Playoffs. Or mid-way through The Office. Or while TBS is playing a re-run of Ferris Bueller's Day Off. Or whatever.

Honestly, dairy-free quesadillas are the only way to go. You'll see, I swear.

Recipe: Hummus Smeared Faux-Dillas

2 whole wheat tortilla shells
2 Tbsp. hummus (store-bought or home-made)
1/4 avocado, sliced
1 scallion, white & green parts, thinly sliced
1 small handful black olives, sliced
1 Tbsp. medium salsa (Whole Foods' 365 brand is good)
ground cumin, to taste
fresh cilantro, to taste
canola or olive oil spray

Optional add-ins: Minced fresh jalapenos; sliced tomatoes; finely diced red onion (plus whatever else you have on-hand that sounds good/needs to be used up!)

Note: Be careful not to over-load your 'dilla - too many toppings will make everything seep out of the sides in a big mess!

1.) Lightly spray 1 side of 1 tortilla shell (your base) with canola/olive oil & place it oil-side down on a plate.
2.) Spread hummus evenly over base shell, stopping slightly before the edges. Top hummus with avocado slices, & sprinkle with 1 or 2 shakes of cumin.
3.) Add scallions & olives, scattering them about as you go. Spoon salsa over your toppings.
4.) Finish by placing the 2nd tortilla shell on top of your base/ingredients, & lightly spraying the top shell with oil.
5.) Move the whole thing into a medium-sized frying pan, & cook approx. 2 mins, using a spatula to press down on the top a bit while it cooks. Carefully flip your faux-dilla over, cooking for approx. 2 mins more, or until shell reaches desired level of crispiness (but don't let it burn!).
6.) Place faux-dilla on a plate & cut into triangles, using a pizza cutter. Sprinkle with cilantro & serve.

Additional note: The Hummus Smeared Faux-Dilla pictured in this post is topped with left-over guacamole, instead of being stuffed with avocado. I highly prefer avocado inside of my 'dillas, but I decided to use what I had available. You should, too!
